Enjoy a getaway to Toledo. Also known as the City of Three Cultures for having been influenced by a historical co-existence of Christians, Muslims and Jews, as you stroll around the streets of Toledo among its huge haul of churches and convents, mosques and synagogues, you will be delighted.

DAY 3 | Madrid - Segovia - Valverdon

SEGOVIA

An intangible air of magic ensconces Segovia. Whether it can be attributed to warm hues of terra-cotta contrasting a backdrop of snow-capped Sierra de Guadarrama mountains or to the ancient architectural splendor of its Roman aqueduct towering over a dynamic, modern city, one thing is for sure: it’s undeniable. And the whole world knows about the gastronomic miracle in Segovia; Cochinillo Asado or Roast Suckling Pig that has become a legend. Do you want to know why?

HACIENDA ZORITA WINE HOTEL

Only 10 minutes from the historic city of Salamanca surrounded by countryside and vineyards. This ancient Dominican monastery, located on the river Tormes, is now a unique Wine – Hotel & Spa, with its’ history stretching back to 1366. It was at Zorita that Cristopher Columbus persuaded the “Reyes Católicos” to provide the support he needed to realize his dream, leading to the discovery of the New World. Enjoy a private wine tasting in an impressive atmosphere.

DAY 4 | Valverdon - Salamanca - Valverdon

BEST CHEESE & BEST HAM

A Zorita team member will lead us through a picturesque day in a landscape adorned with lush evergreen oak trees, olive groves, and vineyards. Our journey will include a visit to the cutting-edge, prestigious cheese factory, where you’ll have the opportunity to partake in guided tastings of their globally acclaimed cheeses. The tasting experience will extend to include guided sampling of some of the finest pure Iberian ham (D.O. Guijüelo), and other delectable cuts. Later, we’ll return to the hotel gardens to relish an elegant countryside luncheon.

SALAMANCA BY NIGHT

Salamanca’s cathedrals and churches rise up suddenly on the other side of the Tormes River, The old city remains much as it was in the 18th century and nothing seems to alter the rhythm of this ancient ville. The city’s pride is the University of Salamanca founded in 1218, it is said to be the third oldest university in Europe after Oxford and Bologna.

The central Plaza Mayor is perhaps Spain’s most glorious square, and throughout the city you’ll see exceptional Plateresque carving thanks to the soft sandstone. Enjoying Salamanca at night is a lifetime experience.

DAY 5 | Valverdon - Jimenez de Jamuz - Astorga

BODEGA EL CAPRICHO

Probably the best beef in the world. Proclaiming the culinary superiority of beef that isn’t raised agribusiness-style and shipped halfway around the world. But within that mind-set is a range of philosophies about what to feed the animals, when to slaughter them, how to age the meat, how to cook it. Selecting the animals can go beyond breed to — yes — personality. This is a chance to meet José Gordon, a breeder and chef in Spain devoted to offer the best meat.

ASTORGA

After lunch, transfer back to Astorga to relax or stroll around on your own across this charming town, you won’t miss the imposing Episcopal Palace of Astorga as it is one of only three works completed by Gaudí outside of Catalonia, along with Casa Botines in León and “El Capricho” in Comillas. Anyway, tonight you will feel Astorga in full and literally “eat the city” by delving into the stories of the best restaurateurs in town in a dynamic show-cooking dinner.

DAY 6 | Astorga - Las Médulas - Bierzo - Astorga

LAS MÉDULAS ROMAN GOLD MINES

Las Médulas is an historic mining site in the region of El Bierzo which used to be the most important gold mine and largest open pit gold mine in the entire Roman Empire. The survey and excavations of pre-Roman and Roman settlements throughout the area allowed for new historical interpretations that greatly enriched the study of Roman mining. A positive result of these systematic studies was the inclusion of Las Médulas as a World Heritage Site in 1997. The view from Mirador de Orellán is truly breathtaking and definitely a highlight.

EL BIERZO, THE SPANISH BURGUNDY

Let’s go to the heart of “the Spanish Burgundy”: Bierzo. The reds from mencía have that Atlantic fresh character sought after by world wine personalities and the wines from DO Bierzo are ranked among the 100 top wines in the world in the last times. Take the opportunity to visit a family run business and among century old vineyards that speak for themselves.

DAY 7 | Astorga - Burgos

BURGOS

We continue our way to Burgos, and you’ll leave the rustic side behind you to enjoy  afine lunch showcasing contemporary cuisine with clearly defined traditional roots.

WINE TASTING

Relax today at Hotel Landa, situated in a painstakingly restored mansion and Medieval tower, and before dinner enjoy the best Ribera del Duero wine tasting session ever, it’ll be fun and instructive. The delicious home made Castilian cuisine at the hotel deserves being enjoyed in calm, it’s freshly-made bread and pastries are superb.

DAY 8 | Burgos

BURGOS

Burgos evokes medieval knights and princesses, such as El Cid,  old stoned streets, green avenues, statues, everything has Cidian. The spiers of the Cathedral – declared World Heritage – stand out over the forest of Gothic church towers. The mansions and houses emblazoned like the one of the Cord, Castilfalé or the House of Miranda remind palace intrigues and times of plenty.

After a guided visit, trying the local traditional lechazo or suckling lamb, this is something of an institution.

DAY 9 | Burgos - Madrid

RIBERA DEL DUERO

Ribera del Duero is one of the world’s most prestigious wine regions and well know for its big well-balanced reds. This is a once in a lifetime visit; accessing one of the finest wineries in the world is an experience attainable by a very few. Grapes apparently were cultivated and wines made in the Ribera del Duero by the Romans, but modern plantings date from the Middle Ages when French monks brought vine cuttings to the Cistercian monastery at Valbuena de Duero.

Today’s last meal offers a stylish and contemporary ambiance. The innovative twist on traditional Spanish cuisine and extensive selection of Ribera del Duero wines create a delightful culinary experience. Prepare for an unforgettable fine dining experience before we get back to Madrid.

Valeska brings a rich gastronomic heritage, inherited from her French father’s love of culinary culture and her Basque grandmother, a well-regarded chef of her time. After studying Economics and Journalism in Barcelona, she moved to Switzerland to pursue hotel management, working at some of the most prestigious hotels in the industry. Fluent in five languages, Valeska is a Certified Sherry Wine Cellar Advanced Expert and holds a WSET Level 3 certification with merit. As co-founder of Paladar y Tomar in 2014, she serves as Marketing Manager, overseeing client relationships and operations at The Valfers. With her unique combination of cultural insight, business acumen, and wine expertise, Valeska crafts unforgettable experiences for every traveler.

FERNANDO PAREDES

Fernando is the CEO, financial director, and lead wine consultant at Paladar y Tomar and The Valfers. A Barcelona native with a background in economics and business management, he transitioned from a corporate career to the world of luxury travel, food, and wine. With extensive experience as General Manager of a bespoke travel company, Fernando excels in strategic planning, operations, and financial oversight. His expertise in wine is equally impressive—he is a Certified Sherry Wine Cellar Advanced Expert, holds a WSET Level 3 certification with merit, and advises on wine programs and cellar selections. I tell everyone that the entire trip, from hotels, to wineries, activities/tours, food & transportation was top notch! Such a variety of everything. Some of the best meals I've ever had (Michelin star). I made new friends and had fun. There wasn't one single moment that I was underwhelmed. It was an expensive trip for me, but I thought throughout the entire trip that is was worth every penny. I needed a bit of an adventure on my own and to take a risk; it paid off in so many ways for me personally. There isn't really anything I would change.All the private excursions that she arranged were excellent. At some point during every tour our guide received a message from our agent checking in on how everything was going. We felt very well taken care of during our honeymoon and very thankful for all the assistance Valeska provided in making this dream vacation come true.
