DAY 2 | Trieste

As we explore its storied streets, we’ll step into Piazza Unità d’Italia, one of Europe’s most stunning squares, framed by grand neoclassical buildings and opening onto the Adriatic. We’ll walk through the historic Borgo Teresiano, where canals and elegant architecture reflect Trieste’s Austro-Hungarian past, and visit the Roman Theater, a testament to the city’s ancient roots. Then, we’ll make our way to the Castello di Miramare, a fairytale-like retreat perched on the edge of the sea, where breathtaking views whisper stories of love, power, and adventure.

After soaking in the castle’s magic, we indulge in a long, leisurely lunch, savoring the flavors of the region—fresh seafood, delicate pastas, and a crisp local wine that perfectly complements the coastal breeze.

Today, we venture into the heart of the Istrian Peninsula, Croatia, with our first stop at a boutique winery in Motovun, a town known as the birthplace of Teran grape.

This winery is a deeply personal project of a young, passionate winemaker dedicated to reviving and redefining this bold indigenous varietal. As we sip and savor, surrounded by breathtaking vineyard views, we’ll not only taste the essence of Istria’s terroir but also feel the dedication and vision that make these wines truly special.

Motovun: A Hilltop Gem Steeped in History and Charm

Motovun is not only the heart of Istrian Teran but also one of the most picturesque hilltop towns in Croatia, offering breathtaking views of rolling vineyards and the Mirna River valley.

As we wander its cobbled streets and medieval walls, we’ll soak in the town’s rich history, legends, and vibrant atmosphere. With its blend of Venetian heritage, charming squares, and artisan shops, Motovun invites us to slow down and embrace the timeless magic of Istria.

DAY 4 | Rovinj - Pula - Krunčići - Limski Kanal - Rovinj

Our journey begins in Pula, home to one of the most spectacular Roman amphitheaters in the world. This remarkably well-preserved arena, dating back to the 1st century AD, once hosted gladiator battles and could hold over 20,000 spectators. As we step inside, we’ll immerse ourselves in the grandeur of ancient Rome, exploring its massive limestone walls, underground passages, and breathtaking views of the Adriatic. And as it could not be otherwise, we set sail on the stunning Limski Kanal, a natural paradise of crystal-clear waters and dramatic cliffs. DAY 5 | Rovinij - Belaj - Vranja - Opatija

During our exclusive visit, we’ll explore its fascinating history and indulge in a tasting of estate-grown wines, where tradition and terroir come together in every glass.

With its noble charm and stunning surroundings, it offers a truly unique perspective on Istria’s winemaking heritage.

The Flavors of the Hunt: An Istrian Game Feast

In a setting that embraces Istria’s rich culinary heritage, we’ll indulge in a meal that celebrates the region’s renowned game dishes.

DAY 6 | Opatija - Volosko - Opatija

Today is all about leisure and discovery as we explore the charming Istrian Riviera, with its elegant coastal towns and relaxed Mediterranean atmosphere.

We begin in Volosko, a quaint fishing village known for its seaside promenade and artistic spirit, before continuing to Opatija, the historic gem of the Riviera. Strolling past grand villas, lush gardens, and the shimmering Adriatic, we’ll soak in the town’s timeless elegance.

At lunchtime, you’ll have free time to wander, relax, shop for local treasures, and savor the vibe at your own pace, whether by the sea or in a cozy café.

Tonight, we unwind in the comfort of our stunning seaside retreat, as Restaurant Navis treats us to an elegant dining experience crafted by chef Davor Kapetanović, a distinguished member of JRE Croatia.

DAY 7 | Opatija - Slovenia - Portopiccolo

Vipava Valley, The Tuscany of Slovenia

Tucked between the Julian Alps and the Adriatic, Vipava Valley is a breathtaking wine region known for its unique microclimate and indigenous varietals. Today, we visit a renowned local winery, where tradition and innovation come together in every glass. As we taste elegant expressions of Zelen, Pinela, and Malvasia, we’ll discover the valley’s winemaking heritage, shaped by centuries of passion and nature’s perfect balance. Surrounded by rolling vineyards and picturesque villages, this experience offers an intimate glimpse into one of Slovenia’s best-kept secrets.

We’ll savor a traditional lunch, immersing ourselves in the region’s authentic flavors before continuing our journey to Portopiccolo. Upon arrival, we’ll check in and unwind, embracing the serene coastal ambiance and the breathtaking Adriatic views.

DAY 8 | Portopiccolo - Udine - Collio Region - Portopiccolo

Our journey takes us to Udine, a charming city where Venetian elegance meets Friulian soul. As we wander through its historic piazzas, arcaded streets, and vibrant cafés, we’ll uncover the city’s rich past, from medieval landmarks to stunning Renaissance architecture.

At the heart of Udine, Piazza della Libertà enchants with its Venetian flair, while the grand Udine Castle offers breathtaking views over the city. Along the way, we’ll soak in the lively local atmosphere, explore hidden corners, and savor the authentic charm of this often-overlooked Italian gem.

DOP Collio: The Jewel of Friuli-Venezia Giulia’s White Wines

DOP Collio (Denominazione di Origine Protetta) belongs to the Friuli-Venezia Giulia region in northeastern Italy. Collio is one of the most prestigious wine areas in the region, known for its elegant white wines, particularly Friulano, Ribolla Gialla, Malvasia, Sauvignon Blanc, and Pinot Grigio.

The area’s unique combination of rolling hills, Ponca soil (marl and sandstone), and Alpine-Adriatic influences creates ideal conditions for producing wines with great minerality, structure, and longevity.

Today, we’ll visit a charming Collio winery, where we’ll dive into the region’s rich winemaking traditions and enjoy a guided tasting of its finest expressions. After this memorable experience, we’ll gather for a farewell lunch at one of our favorite restaurants, savoring the last flavors of this incredible journey in the heart of Friuli-Venezia Giulia.
